Creamy Sweet Grits with Strawberry – Chia Jam

Ingredients for the creamy sweet grits: 2 cups light coconut milk, divided, ½ cups white grits, 1 tbsp vegan butter spread, ¼ tsp sea salt, 1 tbsp coconut sugar, 1 tbsp nut butter, ½ tsp vanilla extract.

Ingredients for the strawberry – chia jam: 2 cups of chopped strawberries, 1 cup pitted medjool dates, 1 tbsp chia seeds.

Blend the strawberries and dates smooth in a blender or in a food processor. Pour the jam into a small bowl and add the chia seeds. Store the mixture covered in a refrigerator for later use.

Heat 1 ½ cups coconut milk adding the sea salt, and bringing it to a boil. Add your grits, reduce the heat, cover the pot and cook for 15 minutes, checking and stirring the mixture occasionally. Add the ½ cup coconut milk, the nut butter, coconut sugar and the vanilla extract, and cook uncovered for 10 minutes. Pour the grits into a bowl, top with the strawberry- chia jam and pimp it up with cut fresh strawberries or coconut sugar sprinkles.
