Mini Banana Idli
Ingredients: ¼ cup of poha/aval/beaten rice, ½ cup of sooji/rava, 1 long sized banana, ¼ cup grated coconut, ¼ cup jiggery, a pinch of salt, a pinch of baking soda, a pinch o cardamom powder, water as required, 2 tsp ghee, 8-10 cashews, 1 tbsp raisins.
Add water to jiggery until it is immersed, then melt it. Soak poha in water for about 5 minutes, until it softens. Grind the soaked poha and grated coconut with little water into a smooth paste. Mash the banana with a fork and mix with rava, the poha coconut paste, the jiggery syrup, ghee, cashews and raisins with a pinch of salt and a pinch of cardamom powder. Make sure to mix everything well, add water to the mixture and let it sit for 20-30 minutes. After the poha and rava have absorbed most of the water, add just as much water to get an idli batter consistency, neither thick, nor thin. Add the baking soda, and make the idli shapes by pouring the batter into the idli mould. Steam it with a cup of water for about 12 minutes at medium heat. Check with a spoon, if it is coming clean, turn off the heat and remove the idlis from the moulds. Serve them warm, and with coconut milk to make them taste even better.
