Mini Vegetable Quiche

Ingredients: ½ diced small zucchini, 4 asparagus spears, ½ cup of cottage cheese, ½ cup of ricotta cheese, 2 beaten small eggs, 3 heaped tbsp diced Cheddar cheese, 1 tbsp olive oil, 1 crushed small clove of garlic, ½ tsp dried basil.

Preheat the oven to 180°C. Remove the woody stems from the asparagus spears. Steam the asparagus for a few minutes and chop them. Beat the eggs with the cottage cheese, ricotta cheese and olive oil. Add all the other ingredients. Pour the mixture into a well greased muffin tray. Bake for about 45 minutes until the quiche turns lightly golden. Cool and then serve.
