Quorn Sausage Casserole With Cannellini Beans

Ingredients: 1 pack of Quorn sausages, 2 tbsp vegetable oil, 1 finely diced onion, 2 finely chopped cloves of garlic, 150g sliced mushrooms, 200g slices of mixed frozen peppers, 1 ½ tbsp smoked paprika, 400g Passata with onions and garlic, 150ml vegetable stock (using one cube of vegetable stock), 400g drained cannellini beans, salt and ground black pepper to your taste, 2 tbsp freshly chopped parsley.

Put the Quorn sausages in a little oil and brown them, then cut them into three on the diagonal. Heat the oil in a large frying pan, put the onion in and fry them for about 4 minutes, until they get soft.

Add the garlic, mushrooms and peppers and keep cooking for about 3 minutes, then stir in the paprika and cook for another minute. Stir in the Passata and the vegetable stock. Stir in the drained cannellini beans and the slices of Quorn sausage and simmer gently for about 6 minutes. Add salt and ground black pepper to your taste and garnish with the chopped parsley.
