Ingredients: 300g of brown rice noodles, 1 tsp fine sea salt, 6 tbsp extra virgin olive oil, 225g raw, peeled king prawns, 4 tbsp lime juice, 1 tsp finely grated lime zest, 2 peeled, pitted and cut into small pieces avocados, 4 chopped plum tomatoes, 1 small, finely chopped red onion, 4 tbsp chopped coriander leaves, 1 tbsp ground cumin, ½ tsp chili powder.

Cook the brown rice noodles in plenty of boiling water. Drain the noodles and add the sea salt and toss well. In the meantime, heat 2 tbsp of the extra virgin oil in a large frying pan over medium heat. Put the prawns into the pan and fry, turning from time to time, for about 3 minutes until they turn opaque and pink. Transfer the prawns into a large bowl, add the other ingredients and mix everything thoroughly. Stir in the noodles and mix well. Serve while still warm.
