Pasta, Carrot and Lentil Soup

Ingredients: 1 tbsp olive oil, 1 tbsp chopped chive, 600ml vegetable stock, 600ml boiling water, 1 chopped onion, 2 cloves of garlic, 200g sliced carrot, 2 sliced sticks of celery, 230g red lentil, 150g wholewheat pasta, 150ml natural fromage frais.

Fry the onion, garlic, carrot and celery in a pan, until they get soft. Put the lentils, the vegetable stock and the boiling water into the pan. Bring it to boil and simmer for about 20 minutes. Remove the pan from the heat and allow it to cool for about 10 minutes. Blend the soup until it is smooth. Return to the pan, put the cooked pasta in and simmer for about 5 minutes, until it is hot. Remove from the heat and stir in the fromage frais before serving.
