A Simplified Haggis
Ingredients: ½ tbsp butter, 1 onion, ½ tsp ground black pepper, ¾ tsp ground coriander, ¾ tsp nutmeg, 1 tsp allspice, ½ tsp dried thyme, or slightly chopped fresh thyme, ¼ tsp cinnamon, 450g ground lamb, 225g chicken livers, 240ml stock, 115g pinhead oatmeal.
Preheat the oven to 175 °C. Warm the butter in a pan, put the finely diced onion into the pan and soften over a medium heat for 5 minutes. Cut off every fatty piece of the chicken livers, and chop roughly. Add the spices and thyme to the onion and cook for a minute, put the lamb and chicken livers and cook until all is cooked, then add the stock and cover the pan. Let it simmer for about 20 minutes. Add the oatmeal and mix well. Transfer to an oven dish, cover it and put into the oven for 30 minutes, then remove the lid and keep cooking for another 10 minutes. Serve with mashed potatoes and rutabaga.
